  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
  • 8 slices bacon cooked until crispy
  • 1 cup sliced mushrooms sautéed
  • 1 cup shredded Monterey Jack or cheddar cheese

Honey Mustard Sauce

  • 1/3 cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice optional, for added tanginess

Seasonings

  • to taste salt
  • to taste black pepper
  • 1/2 teaspoon garlic powder optional
  • 1/2 teaspoon smoked paprika optional

Instructions
 

  • In a bowl, whisk together honey, Dijon mustard, mayonnaise, and lemon juice (if using) until smooth. Set aside.
  • Season pounded chicken breasts with salt, black pepper, garlic powder, and smoked paprika (if using).
  • In a skillet over medium heat, sear the chicken breasts for 3–4 minutes on each side until golden brown. Transfer to a baking dish.
  • Brush a generous layer of honey mustard sauce over each chicken breast. Reserve some sauce for serving.
  • Top each chicken breast with two slices of cooked bacon, followed by sautéed mushrooms, and then sprinkle shredded cheese on top.
  • Bake in a preheated oven at 375°F (190°C) for 10–15 minutes, or until the cheese is melted and the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and let rest for 5 minutes. Drizzle with remaining honey mustard sauce before serving.

Notes

For a lighter version, use turkey bacon and low-fat cheese. Serve with steamed vegetables or a side salad for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
