Ingredients
  

For the Salad:

  • 2 cups cooked chicken shredded or chopped
  • 1/4 cup celery diced
  • 1 tablespoon red onion finely chopped
  • 1/2 ripe avocado mashed
  • 1/2 ripe avocado cut into chunks
  • 2/3 cup mayonnaise Keto / Whole30 compliant; can substitute with Greek yogurt if not following Whole30, Paleo, or Keto
  • 2 teaspoons Dijon mustard
  • 2 teaspoons fresh lemon juice
  • fresh parsley chopped, to taste
  • sea salt to taste
  • black pepper to taste

Instructions
 

  • Add the cooked chicken to a large bowl and shred with two forks or chop on a cutting board.
  • Mash half of the ripe avocado, then chop the onion, celery, parsley, and the remaining half avocado into chunks.
  • Combine the chicken, mashed avocado, mayonnaise, Dijon mustard, chopped vegetables, avocado chunks, fresh lemon juice, salt, and pepper in the large bowl. Use a fork or spoon to mix and combine thoroughly.
  • Taste and adjust seasonings by adding more salt, black pepper, or Dijon mustard as desired.
  • You can enjoy the salad immediately or chill it in the refrigerator for at least 1 hour before serving.
  • To store, cover the salad with plastic wrap or place it in an airtight container and refrigerate for up to 3 days.
  • Serve over a salad, in lettuce wraps, stuffed in avocados, as a casserole, in pasta salads, or in a sandwich.

Notes

For a traditional chicken salad without avocado, simply omit the avocado. Optional add-ins include cucumbers, sliced almonds, chopped pecans, walnuts or cashews, sliced green onion, sweet relish pickle, sliced cherry tomatoes, chopped hard-boiled eggs, or your favorite spices or seasonings such as garlic powder, onion powder, smoked paprika, curry, cayenne pepper, or red pepper flakes. If not following a low-carb diet, you can add grapes, raisins, apples, or dried cranberries for a touch of sweetness.
