Ingredients
  

Dry Ingredients

  • 1 1/2 cups buckwheat flour
  • 1 cup rapadura sugar or brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 2 teaspoons ground cinnamon
  • 1/4 cup poppy seeds
  • 1 pinch salt

Wet Ingredients

  • 1 cup mashed ripe banana about 3 bananas
  • 1 large egg
  • 1/2 cup plain Greek yogurt
  • 1/4 cup extra virgin olive oil or macadamia nut oil
  • 1/3 cup maple syrup
  • 2 teaspoons vanilla bean paste or vanilla extract

Add-ins & Toppings

  • 1 cup blackberries fresh or frozen
  • 2 tablespoons blackberry jam store-bought or homemade
  • 1 banana halved, for topping

Instructions
 

  • Preheat oven to 160°C (325°F). Line a standard loaf tin with baking paper.
  • In a large mixing bowl, combine buckwheat flour, rapadura sugar, baking powder, bicarbonate of soda, cinnamon, poppy seeds, and salt. Stir well.
  • Add mashed bananas, egg, yogurt, olive oil, maple syrup, and vanilla bean paste. Mix until just combined.
  • Gently fold in the blackberries and swirl in the blackberry jam, ensuring even distribution.
  • Pour batter into the prepared loaf tin. Place the halved banana on top for decoration.
  • Bake for 1 hour to 1 hour and 10 minutes, or until golden brown and a skewer inserted into the center comes out clean.
  • Allow the bread to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container in the refrigerator for up to 3 days. Freeze individual slices wrapped in plastic for up to 3 months.
