Instructions
Preheat oven to 160°C (325°F). Line a standard loaf tin with baking paper.
In a large mixing bowl, combine buckwheat flour, rapadura sugar, baking powder, bicarbonate of soda, cinnamon, poppy seeds, and salt. Stir well.
Add mashed bananas, egg, yogurt, olive oil, maple syrup, and vanilla bean paste. Mix until just combined.
Gently fold in the blackberries and swirl in the blackberry jam, ensuring even distribution.
Pour batter into the prepared loaf tin. Place the halved banana on top for decoration.
Bake for 1 hour to 1 hour and 10 minutes, or until golden brown and a skewer inserted into the center comes out clean.
Allow the bread to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container in the refrigerator for up to 3 days. Freeze individual slices wrapped in plastic for up to 3 months.
