  • 4 fillets black drum fish about 6-8 ounces each
  • 2 tablespoons olive oil
  • 1 teaspoon paprika smoked or sweet
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper optional, for heat
  • to taste salt and black pepper
  • 1 lemon sliced into wedges for serving
  • 1/4 cup chopped parsley for garnish

Instructions
 

  • Pat the black drum fillets dry with paper towels and season both sides with salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
  • Heat the olive oil in a large skillet over medium heat until shimmering.
  • Place the seasoned fillets in the skillet, skin-side down if applicable. Cook for 4-5 minutes without moving to allow the fish to develop a golden crust.
  • Flip the fillets carefully using a fish spatula and cook for another 3-4 minutes, or until the fish is opaque and flakes easily with a fork.
  • Remove the fillets from the skillet and let them rest for a minute. Garnish with fresh parsley and serve with lemon wedges on the side.

Notes
