Ingredients
  

Meatloaf

  • 1 pound ground beef 85/15 preferred
  • 1 egg
  • 1/3 cup diced yellow onion
  • 1/4 cup rolled oats
  • 1/4 cup ketchup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Glaze

  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Garnish

  • chopped fresh parsley optional

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine ground beef, egg, diced onion, rolled oats, ketchup, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix thoroughly using clean hands until well incorporated.
  • Shape the meat mixture into a loaf and place it on the prepared baking sheet.
  • In a small bowl, whisk together the glaze ingredients: ketchup, brown sugar, apple cider vinegar, garlic powder, and onion powder.
  • Brush one-third of the glaze over the top and sides of the meatloaf.
  • Bake the meatloaf in the preheated oven for 30 minutes.
  • Remove the meatloaf from the oven and increase the oven temperature to 400°F (200°C). Brush the remaining glaze onto the meatloaf in a thick, even layer.
  • Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
  • Once cooked, remove the meatloaf from the oven and let it rest for 5 minutes before slicing.
  • Garnish with fresh parsley if desired and serve warm.

Notes

For a gluten-free version, ensure that the rolled oats used are certified gluten-free. Adjust the sweetness of the glaze to preference by reducing or increasing the brown sugar.
