A traditional Spanish dish from Asturias, cachopo consists of two large beef fillets filled with ham and cheese, breaded and fried to perfection. It's a hearty meal that's both indulgent and satisfying.

  • 4 large beef fillets sirloin or flank steak, about 1/4 inch thick
  • 4 slices Serrano ham or prosciutto
  • 4 slices Manchego cheese or other melting cheese
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs preferably panko
  • to taste salt and pepper
  • 1/2 cup olive oil for frying

Instructions
 

  • Place the beef fillets between sheets of plastic wrap and use a meat tenderizer to pound them to an even thickness of about 1/4 inch. Season both sides with salt and pepper.
  • Lay two of the fillets on a clean surface. Place a slice of Serrano ham and a slice of Manchego cheese on each. Top with the remaining fillets to form a sandwich, pressing the edges together to seal.
  • Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each beef sandwich in flour, shaking off excess, then dip in egg, and finally coat with breadcrumbs, pressing gently to adhere.
  • In a large skillet, heat olive oil over medium heat. Once hot, add the breaded fillets and cook for 3–4 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan; cook in batches if necessary.
  • Transfer the cooked cachopos to a plate lined with paper towels to drain excess oil. Serve hot, accompanied by French fries, roasted red peppers, or a fresh salad.

Notes

For added flavor, consider adding sautéed mushrooms or roasted red peppers to the filling. Ensure the oil is hot enough before frying to achieve a crispy crust without overcooking the meat. Cachopo pairs wonderfully with a glass of Spanish red wine or cider.
