  • 1 lb fresh strawberries washed and dried
  • 1 cup carob chips unsweetened or naturally sweetened
  • 1–2 tablespoons coconut oil for smoothness
  • Optional toppings: crushed nuts, shredded coconut, or colorful sprinkles

Instructions
 

  • Rinse strawberries under cold running water to remove any dirt or pesticides. Place them on a clean towel and gently pat dry. Ensure they are completely dry to avoid water mixing with the carob coating, which can lead to uneven textures.
  • Set up a double boiler by filling a medium saucepan with a few inches of water and bringing it to a simmer. Place a heatproof bowl on top, ensuring it doesn't touch the water. Add 1 cup of carob chips to the bowl and stir occasionally until melted and smooth. Gradually add 1–2 tablespoons of coconut oil to achieve a silky consistency.
  • Line a baking sheet with parchment paper. Hold each strawberry by the stem or insert a skewer/toothpick into the top. Dip the strawberry into the melted carob, ensuring even coverage. Gently twist as you lift to minimize dripping. If desired, immediately sprinkle crushed nuts, shredded coconut, or colorful sprinkles over the coated strawberry before the carob sets.
  • Place the coated strawberries on the prepared baking sheet. Once all strawberries are coated, refrigerate for about 15–20 minutes to allow the carob to set completely.
  • Once set, arrange the carob-covered strawberries on a serving platter. Enjoy immediately, or store in an airtight container in the refrigerator for up to 2 days.

Notes

Ensure strawberries are completely dry before dipping to prevent the carob from seizing. For a creamier texture, consider adding a splash of vanilla extract to the melted carob. These treats are perfect for special occasions or as a healthy snack option.
