  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup pastina pasta or any small pasta
  • 2 cups cooked chicken shredded or diced
  • 1 teaspoon dried parsley
  • to taste salt and black pepper
  • 1/4 cup grated Parmesan cheese for serving

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Pour in the chicken broth and bring to a gentle boil. Stir in the pastina pasta and cook for 6-8 minutes, or until tender.
  • Add the cooked chicken and dried parsley. Reduce the heat to low and simmer for 5 minutes to heat through.
  • Season the soup with salt and black pepper to taste. Serve warm, topped with grated Parmesan cheese.
