Chopt Spicy Chicken Soup with Rice

Ingredients
  

Protein

  • 2 boneless skinless chicken breasts or thighs for richer flavor

Grains

  • 1 cup long-grain white rice or brown rice for more fiber

Liquids

  • 4 cups chicken broth homemade or store-bought
  • 1 14.5-ounce can diced tomatoes undrained

Vegetables

  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 red bell pepper diced

Spices and Seasonings

  • 1 tablespoon olive oil
  • 1 teaspoon chili flakes adjust to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • to taste salt and freshly ground black pepper

Garnish

  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • In a large pot, heat olive oil over medium heat. Season the chicken with salt, pepper, and half of the smoked paprika.
  • Add the chicken to the pot and cook for 6–7 minutes per side until golden brown and fully cooked. Remove and set aside to cool. Shred with two forks.
  • In the same pot, add more olive oil if needed. Sauté the chopped onion and garlic for 3–4 minutes until translucent and fragrant.
  • Add the diced red bell pepper and cook for another 2–3 minutes until softened.
  • Stir in the rice, chili flakes, cayenne pepper, and remaining smoked paprika. Mix well to coat the rice in the spices.
  • Pour in the chicken broth and diced tomatoes. Stir to combine and bring the soup to a boil.
  • Reduce heat and simmer for 15 minutes until the rice is tender and the broth thickens slightly.
  • Add the shredded chicken back into the pot. Stir to combine and let cook for another 5 minutes.
  • Adjust seasoning with more salt, pepper, or spices if needed. Serve hot, garnished with fresh cilantro.

Notes

For a milder version, reduce the amount of chili flakes and cayenne. For extra freshness, squeeze a bit of lime juice before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
