  • 1 lb clams cleaned
  • 1 lb shrimp peeled and deveined
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 stalks celery diced
  • 2 medium carrots diced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 cup white wine
  • 4 cups fish stock
  • to taste salt
  • to taste black pepper freshly ground
  • 2 tablespoons olive oil

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, celery, and carrots. Sauté until the vegetables are soft and fragrant, about 5 minutes.
  • Add the cleaned clams and shrimp to the pot. Cook for a few minutes until the shrimp turn pink and the clams start to open.
  • Pour in the white wine and scrape the bottom of the pot to deglaze, releasing any flavorful bits. Let it simmer for 2 minutes.
  • Add the fish stock, bay leaves, and dried thyme. Bring the broth to a simmer and let it cook for about 20-25 minutes, allowing the flavors to meld together.
  • Season the broth with salt and freshly ground black pepper to taste.
  • Ladle the broth into bowls and garnish with fresh herbs like parsley or chives, if desired. Serve hot with crusty bread or a side salad.

Notes

Feel free to customize this broth by adding other seafood like mussels or scallops. For a richer flavor, consider using homemade fish stock. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
