  • 1 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1 large egg beaten
  • 1/2 cup milk
  • 1 cup sweet corn kernels fresh or canned, drained
  • 1 cup vegetable oil for frying

Instructions
 

  • In a mixing bowl, whisk together the flour, cornmeal, baking powder, salt, and paprika.
  • Add the beaten egg and milk to the dry ingredients. Mix until a smooth batter forms.
  • Fold in the sweet corn kernels, ensuring they are evenly distributed throughout the batter.
  • Heat the vegetable oil in a deep skillet or fryer over medium-high heat to about 350°F (175°C).
  • Using a spoon, drop small scoops of batter into the hot oil. Fry the nuggets in batches for 2-3 minutes on each side, or until golden brown and crispy.
  • Remove the fried nuggets with a slotted spoon and place them on a baking sheet lined with paper towels to drain excess oil.
  • Serve warm with your favorite dipping sauces, such as ranch or honey mustard. Enjoy!

Notes

For an extra kick, add a pinch of cayenne pepper to the batter. These Corn Nuggets are best enjoyed fresh but can be reheated in an oven to maintain their crispiness.
