  • 8 ounces crab meat lump or claw, picked over for shells
  • 1 cup heavy cream
  • 2 large egg yolks
  • 1/4 cup Parmesan cheese grated
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon paprika
  • to taste salt and black pepper
  • 2 tablespoons granulated sugar for caramelized topping

Instructions
 

  • Preheat your oven to 325°F (160°C). Place four ramekins in a baking dish.
  • In a mixing bowl, whisk together the heavy cream, egg yolks, Parmesan cheese, Dijon mustard, paprika, salt, and black pepper until smooth.
  • Gently fold in the crab meat, being careful not to break it apart.
  • Divide the mixture evenly among the ramekins. Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.
  • Bake in the preheated oven for 20-25 minutes, or until the custard is set and slightly golden on top.
  • Remove the ramekins from the water bath and let them cool slightly. Sprinkle granulated sugar evenly over the tops of each ramekin.
  • Use a kitchen torch to caramelize the sugar until it forms a crispy, golden crust. Serve warm or at room temperature.

Notes

For the best flavor, use fresh crab meat. This dish can be prepared in advance and caramelized just before serving. Pair it with a crisp white wine for an elegant experience.
