  • 1 cup mashed sweet potato from a large cooked sweet potato
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup maple syrup or honey
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract optional, for added flavor

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a mini muffin tin and set it aside.
  • Peel a large sweet potato, pierce the skin a few times, and microwave on high for 5-10 minutes until it's soft. Once cooked, mash the sweet potato and measure out 1 cup. Set it aside.
  • In a small saucepan over medium heat, combine the peanut butter and maple syrup. Stir occasionally until the mixture is melted and smooth.
  • In a medium-sized bowl, combine the mashed sweet potato, the melted peanut butter mixture, and the cocoa powder. Stir or whisk until everything is thoroughly mixed and smooth. If desired, add 1 teaspoon of vanilla extract for enhanced flavor.
  • Evenly distribute the batter into the prepared mini muffin tin. Smooth the tops if needed.
  • Bake in the preheated oven for 20-22 minutes. Let the brownies cool completely before removing them from the pan.
