  • 4–6 medium oranges preferably organic
  • 2 lemons
  • 6–8 cups water for boiling and extracting flavors
  • 4–6 cups vegan-friendly sugar adjusted to taste
  • 1 inch fresh ginger grated (optional)

Instructions
 

  • Wash the oranges and lemons thoroughly under running water to remove any dirt or pesticides. Using a sharp knife, slice the fruits thinly, including the peel, to achieve the characteristic texture of marmalade. Remove all seeds to avoid bitterness in the final product.
  • Place the sliced citrus fruits into a large saucepan. Add 6–8 cups of water, ensuring the fruit is fully submerged. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 30 minutes, or until the fruit peels have softened.
  • After the fruit has softened, measure the mixture to determine its volume. Add an equal amount of vegan-friendly sugar to the mixture (e.g., if you have 4 cups of fruit mixture, add 4 cups of sugar). Stir well to combine. If using, add the grated fresh ginger at this stage for an added zesty flavor.
  • Increase the heat to medium-high and bring the mixture to a rolling boil. Attach a candy thermometer to the side of the saucepan, ensuring it doesn't touch the bottom. Boil the mixture until it reaches 220°F (104°C), stirring frequently to prevent sticking. This process may take about 15–20 minutes. To test if the marmalade is ready, place a small amount on a chilled plate. If it wrinkles when pushed with a finger, it's set. If not, continue boiling and test again after a few minutes.
  • Once the marmalade has reached the desired consistency, remove it from heat and let it sit for about 5 minutes to allow the fruit to distribute evenly. Carefully ladle the hot marmalade into sterilized jars, leaving about 1/4-inch headspace at the top. Wipe the rims clean, seal with lids, and process in a boiling water bath for 10 minutes to ensure proper sealing. Allow the jars to cool completely at room temperature. Once cooled, check the seals and store in a cool, dark place. Refrigerate after opening.

Notes

For a smoother marmalade, you can blend the mixture slightly before adding sugar. Ensure to use vegan-friendly sugar, as some sugars are processed with bone char. Adding spices like cinnamon or herbs like rosemary can provide unique flavor variations. Marmalade pairs excellently with toast, scones, or as a glaze for savory dishes.
