Equipment

  • Steamer Basket
  • Mixing Bowls
  • Small Spoon
  • Knife
  • Cutting Board

Ingredients

Main Ingredients

  • 1 package vegan dumpling wrappers round, about 30 wrappers
  • 2 cups vegan broth mushroom or vegetable
  • 1 tablespoon agar-agar powder
  • 1 cup shiitake mushrooms finely chopped
  • 1 cup napa cabbage finely chopped
  • 1 block firm tofu pressed and crumbled
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • to taste salt and pepper

Instructions

  • In a saucepan, bring the vegan broth to a boil. Stir in the agar-agar powder until fully dissolved. Pour the mixture into a shallow dish and refrigerate for about 1 hour, or until set into a firm gel.
  • Once set, cut the broth gel into small cubes, approximately 1/4-inch in size. Set aside.
  • In a mixing bowl, combine the chopped shiitake mushrooms, napa cabbage, crumbled tofu, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well to incorporate all ingredients.
  • Gently fold the broth gel cubes into the vegetable filling mixture, ensuring even distribution without breaking the cubes.
  • Place a dumpling wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center. Carefully pleat and pinch the edges to seal the dumpling, forming a small pouch. Repeat with remaining wrappers and filling.
  • Line a steamer basket with parchment paper or lightly oil it to prevent sticking. Arrange the dumplings in the steamer, leaving space between each to avoid sticking.
  • Bring a pot of water to a boil and place the steamer basket over it. Cover and steam the dumplings for 10–12 minutes, or until the wrappers become translucent and the filling is heated through.
  • Carefully remove the dumplings from the steamer and serve hot with your choice of dipping sauce.

Notes

Ensure the broth gel is fully set before incorporating into the filling to maintain the signature 'soup' effect inside the dumplings. Serve with a dipping sauce made of soy sauce, rice vinegar, and a touch of chili oil for added flavor.
