  • 4 pieces bone-in, skin-on chicken thighs or breasts
  • 1 cup uncooked long-grain rice
  • 1 can cream of mushroom or cream of chicken soup 10.5 oz
  • 1 cup chicken broth
  • 1 packet onion soup mix

Optional Add-Ins

  • Vegetables: peas, carrots, or green beans
  • Spices: paprika, garlic powder, or fresh herbs like thyme
  • Cheese: shredded cheddar or parmesan
  • Proteins: cooked bacon or turkey

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a 9×13-inch baking dish.
  • In a mixing bowl, combine the uncooked rice, cream of soup, and chicken broth. Mix until well combined.
  • Pour the rice mixture into the prepared baking dish, spreading it evenly. Place the chicken pieces on top of the rice mixture, skin-side up. Sprinkle the onion soup mix over the chicken and rice.
  • If using, add vegetables around the chicken pieces. Sprinkle additional spices or herbs over the top as desired.
  • Cover the baking dish tightly with aluminum foil to retain moisture. Bake in the preheated oven for 1.5 to 2 hours, or until the chicken is cooked through and the rice is tender. For a crispy skin, remove the foil during the last 20 minutes of baking.
  • Ensure the internal temperature of the chicken reaches 165°F (74°C).
  • Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs if desired.

Notes

For a homemade cream of soup alternative: Sauté 2 tablespoons of butter with 2 tablespoons of flour to create a roux. Gradually whisk in 1 cup of chicken broth and 1 cup of milk. Season with garlic powder, onion powder, and salt to taste.
