  • 2 lbs chicken pieces thighs and drumsticks preferred
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon honey optional, for a touch of sweetness

Instructions
 

  • In a mixing bowl, combine olive oil, paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, black pepper, lemon juice, and honey (if using) to create the marinade.
  • Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight, to allow flavors to penetrate.
  • Preheat the oven to 375°F (190°C). Arrange the marinated chicken pieces in a baking dish in a single layer.
  • Bake the chicken for 45–50 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with its juices halfway through cooking to enhance moisture and flavor.
  • Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving to allow the juices to redistribute.

Notes

For an extra crispy skin, broil the chicken for the last 2–3 minutes of cooking, keeping a close eye to prevent burning.
