  • 2 teaspoons olive oil
  • 500 grams extra lean ground beef
  • 450 grams sweet potatoes cubed
  • 1 large yellow bell pepper chopped
  • 1 red onion diced
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 400 grams canned diced tomatoes
  • 400 grams canned black beans rinsed
  • 1/2 cup water
  • 100 grams kale or spinach roughly chopped

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Once hot, add the ground beef and cook for 3–4 minutes, breaking it up with a wooden spoon.
  • Stir in the cubed sweet potatoes, chopped bell pepper, diced red onion, ground cumin, garlic powder, salt, and black pepper. Cook for 4–5 minutes until the vegetables are slightly tender.
  • Add the canned diced tomatoes, rinsed black beans, and water to the skillet. Stir to combine, then let the mixture simmer for about 15 minutes until the sauce thickens and the flavors meld together.
  • Fold in the chopped kale or spinach and cook for an additional 2–3 minutes until wilted.
  • Remove from heat and serve warm. Enjoy!

Notes

This versatile skillet meal can be customized with additional vegetables like mushrooms, green beans, or corn. It's delicious served over rice, quinoa, or with a side of steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
