Homemade Vanilla Paste

  • 6 vanilla beans preferably Grade B
  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon xanthan gum as a thickener

Instructions
 

  • Split the vanilla beans lengthwise and scrape out the seeds using the back of a knife.
  • In a food processor, combine the vanilla seeds and granulated sugar. Pulse until well combined and the mixture resembles wet sand.
  • In a small saucepan, combine the sugar-vanilla mixture with water. Heat over medium heat, stirring until the sugar dissolves completely.
  • Once the mixture reaches a gentle simmer, sprinkle in the xanthan gum while whisking continuously to prevent lumps. Continue to cook for an additional 2–3 minutes until the mixture thickens to a syrupy consistency.
  • Remove from heat and let the vanilla paste cool to room temperature.
  • Transfer the cooled vanilla paste into a sterilized storage jar. Seal tightly and store in a cool, dark place. For optimal flavor, allow the paste to mature for 1–2 weeks before use.

Notes

For a richer flavor, consider using a combination of different vanilla bean varieties, such as Madagascar and Tahitian. This homemade vanilla paste can be used as a 1:1 substitute for vanilla extract in recipes, providing a more intense flavor and appealing vanilla bean specks.
