  • 1 cup all-purpose flour sifted
  • 1 teaspoon baking powder
  • 2 large eggs at room temperature
  • 2/3 cup granulated sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest optional, for added flavor
  • 1/2 cup unsalted butter melted and slightly cooled
  • 1/4 teaspoon salt

Instructions
 

  • In a bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
  • In a separate mixing bowl, whisk the eggs and granulated sugar until the mixture becomes pale, thick, and fluffy. This should take about 5 minutes.
  • Add the heavy cream, vanilla extract, and lemon zest (if using) to the egg mixture. Stir gently until fully combined.
  • Gently fold the sifted dry ingredients into the wet mixture using a spatula. Be careful not to overmix; fold until just combined.
  • Slowly incorporate the melted and slightly cooled unsalted butter into the batter, folding gently until fully integrated.
  • Cover the batter and refrigerate for at least 1 hour, or up to overnight. Chilling the batter helps achieve the classic madeleine hump.
  • Preheat the oven to 375°F (190°C). Grease the madeleine pan with butter or non-stick spray.
  • Spoon the chilled batter into the prepared madeleine pan, filling each mold about three-quarters full.
  • Bake for 10–12 minutes, or until the edges are golden brown and the centers spring back when lightly touched.
  • Remove the madeleines from the oven and allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For added variety, consider dipping the cooled madeleines in melted chocolate or dusting them with powdered sugar before serving. Store in an airtight container at room temperature for up to 3 days.
