  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups chopped vegetables carrots, celery, zucchini, etc.
  • 1 14.5-ounce can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup cooked protein chicken, beans, or tofu
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt and black pepper
  • 2 cups fresh spinach optional, for added nutrients

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes, until softened.
  • Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  • Add the chopped vegetables and cook for 5 minutes, stirring occasionally.
  • Pour in the diced tomatoes, vegetable broth, and your choice of protein. Stir in the cumin, smoked paprika, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 25-30 minutes, or until the vegetables are tender.
  • If using, stir in the fresh spinach during the last 5 minutes of cooking.
  • Adjust seasoning to taste and serve hot. Enjoy with crusty bread or as is!

Notes
