1cupcooked proteinchicken, beans, or tofu
1teaspoonground cumin
1teaspoonsmoked paprika

Instructions
Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes, until softened.
Stir in the minced garlic and cook for 1-2 minutes until fragrant.
Add the chopped vegetables and cook for 5 minutes, stirring occasionally.
Pour in the diced tomatoes, vegetable broth, and your choice of protein. Stir in the cumin, smoked paprika, salt, and black pepper.
Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 25-30 minutes, or until the vegetables are tender.
If using, stir in the fresh spinach during the last 5 minutes of cooking.
Adjust seasoning to taste and serve hot. Enjoy with crusty bread or as is!
