Cake Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 4 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 cup whole milk room temperature

Frosting Ingredients

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream plus more if needed
  • 1 teaspoon vanilla extract
  • to taste food coloring optional, for decoration

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans or line them with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Alternate adding the flour mixture and the milk to the batter, starting and ending with the flour mixture. Mix just until combined.
  • Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
  • For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract. Beat until smooth and fluffy, adding food coloring if desired.
  • Frost and decorate the cooled cakes as desired. Serve and enjoy this special Mother's Day treat!

Notes

This cake can be customized with different colors or decorations to suit the occasion. Store leftovers in an airtight container at room temperature for up to 2 days.
