  • 4 large potatoes peeled and thinly sliced
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 large eggs beaten
  • 1/2 cup chicken broth or vegetable broth for vegetarian option
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley or fresh, chopped

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie dish.
  • In a skillet, heat the olive oil over medium heat. Sauté the diced onion and garlic until softened, about 5 minutes. Set aside.
  • In a mixing bowl, whisk together the beaten eggs, chicken broth, salt, black pepper, and parsley.
  • Layer half of the sliced potatoes in the prepared pie dish, slightly overlapping the edges. Spread half of the sautéed onion and garlic mixture over the potatoes.
  • Repeat the layers with the remaining potatoes and onion mixture. Pour the egg mixture evenly over the top, ensuring it seeps into the layers.
  • Cover the dish with aluminum foil and bake in the preheated oven for 35 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and the potatoes are tender.
  • Let the potato pie cool for 10 minutes before slicing. Serve warm and enjoy!

This Passover Potato Pie is a versatile dish that can be served as a main course or side dish. For added flavor, sprinkle grated cheese on top before baking if dairy is allowed.
