Ingredients
  

For the Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted

For the Cheesecake Filling

  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the Pear Topping

  • 2 ripe pears peeled, cored, and thinly sliced
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch

Instructions
 

  • Preheat the oven to 325°F (163°C). Line a 9×9-inch baking pan with parchment paper.
  • In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  • Press the crust mixture evenly into the bottom of the prepared baking pan. Bake for 8–10 minutes, then let it cool slightly.
  • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
  • Pour the cheesecake filling over the cooled crust, spreading it evenly.
  • In a separate bowl, toss the pear slices with brown sugar, cinnamon, lemon juice, and cornstarch until evenly coated.
  • Arrange the pear slices over the cheesecake filling.
  • Bake for 35–40 minutes, or until the center is set and the edges are lightly golden.
  • Allow the bars to cool to room temperature, then refrigerate for at least 2 hours before slicing and serving.

Notes

Use firm but ripe pears for the best texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
