Instructions
Preheat the oven to 325°F (163°C). Line a 9×9-inch baking pan with parchment paper.
In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
Press the crust mixture evenly into the bottom of the prepared baking pan. Bake for 8–10 minutes, then let it cool slightly.
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
Pour the cheesecake filling over the cooled crust, spreading it evenly.
In a separate bowl, toss the pear slices with brown sugar, cinnamon, lemon juice, and cornstarch until evenly coated.
Arrange the pear slices over the cheesecake filling.
Bake for 35–40 minutes, or until the center is set and the edges are lightly golden.
Allow the bars to cool to room temperature, then refrigerate for at least 2 hours before slicing and serving.
Notes
Use firm but ripe pears for the best texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
