Ingredients
  

Main Ingredients

  • 1 cup long-grain rice uncooked
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 1 medium bell pepper diced (any color)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika smoked or sweet
  • 1/4 teaspoon cayenne pepper optional, for heat
  • 1/2 cup frozen peas
  • to taste salt and black pepper
  • 1/4 cup chopped parsley for garnish

Instructions
 

  • Heat olive oil in a saucepan over medium heat. Add the diced onion and bell pepper, and sauté for 5 minutes until softened.
  • Add the garlic powder, paprika, cayenne pepper (if using), and uncooked rice. Stir to coat the rice with the spices and cook for 1-2 minutes.
  • Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Stir in the frozen peas during the last 5 minutes of cooking. Season with salt and black pepper to taste.
  • Remove from heat and let the rice sit covered for 5 minutes. Fluff with a fork and garnish with chopped parsley before serving.
