Ingredients
  

Main Ingredients

  • 1 cup long-grain rice rinsed and drained
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup diced bell peppers any color
  • 1/2 cup frozen peas
  • 2 cups chicken broth or vegetable broth for vegetarian
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • to taste salt and black pepper
  • 2 tablespoons chopped parsley for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
  • Add the minced garlic and cook for another minute until fragrant.
  • Stir in the rice, bell peppers, and frozen peas. Cook for 2-3 minutes, stirring frequently, to toast the rice slightly.
  • Pour in the chicken broth, smoked paprika, ground cumin, salt, and black pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork and garnish with chopped parsley before serving.

Notes

Sassy Rice is versatile and can be customized with your favorite vegetables or proteins like shrimp or chicken. Leftovers can be stored in the refrigerator for up to 3 days.
