  • 6 ears fresh sweet corn kernels cut off the cob
  • 2 tablespoons unsalted butter
  • 1 tablespoon bacon grease optional
  • to taste kosher salt
  • to taste fresh cracked black pepper

Instructions
 

  • Shuck the corn by removing husks and silks. Cut kernels off the cob into a bowl, and use the dull side of the knife to scrape the cobs to extract the milky liquid.
  • Melt butter and bacon grease in a large skillet over medium heat.
  • Add the corn kernels and the milky liquid to the skillet. Cook for about 10 minutes, stirring occasionally, until the mixture thickens slightly.
  • Season with salt and pepper to taste. Add the remaining butter and cook for an additional 5 minutes.
  • Remove from heat and serve warm as a side dish.

Notes

Fresh corn is best for this recipe, but canned or frozen corn can be substituted. For added flavor, consider mixing in chopped onions, garlic, or diced peppers. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
