  • 2 cups fresh spinach leaves
  • 2 large eggs hard-boiled
  • 1 tablespoon olive oil
  • 1 clove garlic minced, optional
  • salt and pepper to taste
  • red pepper flakes or lemon juice optional, for added flavor

Instructions
 

  • Place the eggs in a saucepan and cover with water. Bring to a boil over medium-high heat, then reduce heat and simmer for 9–10 minutes for hard-boiled eggs.
  • Transfer the eggs to a bowl of ice water to cool. Peel and set aside.
  • Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add the spinach leaves and cook, stirring occasionally, until wilted, about 2–3 minutes. Season with salt and pepper to taste.
  • Slice the boiled eggs in half or quarters. Plate the sautéed spinach and top with the sliced eggs.
  • Optional: Sprinkle red pepper flakes or drizzle lemon juice over the dish for added flavor. Serve immediately.

Notes

This simple recipe is versatile and can be customized with additional spices or herbs. Store leftovers in the refrigerator for up to 2 days.
