Ingredients

  • 1.5 pounds steelhead trout fillet skin-on
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 medium lemon sliced into rounds
  • to taste salt and black pepper
  • 1 tablespoon chopped parsley for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or line it with aluminum foil.
  • Place the steelhead trout fillet in the prepared baking dish, skin-side down. Drizzle olive oil over the top and evenly spread minced garlic over the fillet.
  • Sprinkle the trout with dried thyme, rosemary, salt, and black pepper. Arrange lemon slices on top of the fillet.
  • Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is opaque in the center.
  • Remove from the oven and let rest for a few minutes. Garnish with freshly chopped parsley before serving.
  • Serve warm with your favorite side dishes such as roasted vegetables, rice, or a fresh salad.

Notes

Steelhead trout is a versatile fish that can be cooked in many ways. For a crispy finish, broil for the last 2 minutes of cooking. Leftovers can be refrigerated in an airtight container for up to 2 days.
