white beans
drained and rinsed

Instructions
Heat the olive oil in a large pot over medium heat. Add the sliced sausage and cook for 5-7 minutes until browned. Remove and set aside.
In the same pot, sauté the diced onion until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
Pour in the chicken broth and bring to a gentle simmer. Add the chopped greens and cook for 10 minutes, until tender.
Stir in the white beans, smoked paprika, and cayenne pepper (if using). Return the sausage to the pot and simmer for another 10 minutes.
Season with salt and black pepper to taste. Serve warm and enjoy!
Notes
This Swamp Soup pairs beautifully with cornbread or crusty bread. Leftovers can be stored in the refrigerator for up to 3 days.
