  • 2 medium sweet potatoes peeled and cubed
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter softened
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • to taste salt

For the Caramelized Topping

  • 4 tablespoons granulated sugar

Instructions
 

  • Preheat your oven to 375°F (190°C). Place the peeled and cubed sweet potatoes in a pot of boiling water and cook until tender, about 10-12 minutes.
  • Drain the sweet potatoes and transfer them to a blender or food processor. Add the heavy cream, butter, brown sugar, vanilla extract, and a pinch of salt. Blend until smooth.
  • Divide the sweet potato mixture evenly among ramekins and place them in a baking dish. Add hot water to the baking dish until it reaches halfway up the sides of the ramekins.
  • Bake in the preheated oven for 15-20 minutes, or until the sweet potato mixture is heated through.
  • Remove the ramekins from the baking dish and let them cool slightly. Sprinkle 1 tablespoon of granulated sugar evenly over the top of each ramekin.
  • Using a kitchen torch, caramelize the sugar until it forms a golden, crispy crust. Serve immediately and enjoy!

Notes

This Sweet Potato Brûlée is a versatile dish that can be served as a dessert or a fancy side. For extra flavor, top with a sprinkle of cinnamon or nutmeg before caramelizing the sugar.
