  • 2 large sweet potatoes peeled and chopped
  • 4 cups water
  • 2/3 cup orange juice
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3 cloves

Instructions
 

  • Place the peeled and chopped sweet potatoes into a large pot.
  • Add orange juice, brown sugar, ground cinnamon, ground nutmeg, cloves, and water to the pot.
  • Bring the mixture to a boil over medium heat.
  • Reduce the heat and let it simmer for 1.5 to 2 hours, or until the sweet potatoes are soft and the mixture has thickened.
  • Remove the cloves from the mixture.
  • For a smoother texture, blend the mixture using a blender. Alternatively, mash it using a spatula, potato masher, or fork until desired consistency is reached.
  • Allow the sweet potato butter to cool before transferring it to a jar or airtight container.
  • Store in the refrigerator for up to 3 weeks or freeze for up to 3 months.

Notes

This sweet potato butter pairs well with toast, biscuits, pancakes, or as a dip. For a healthier version, consider substituting brown sugar with an alternative sweetener like erythritol.
