  • 2 large sweet potatoes peeled and chopped if steaming or boiling
  • 1/2 cup water or vegetable broth for blending (optional)

Instructions
 

  • Choose your cooking method: steaming, boiling, or roasting. For steaming, chop the sweet potatoes and place them in a steamer basket over boiling water. Cover and steam for 15-20 minutes until fork-tender.
  • For boiling, place peeled and chopped sweet potatoes in a large pot. Cover with water and bring to a boil. Reduce heat and simmer for 15-25 minutes until tender. Drain well.
  • For roasting, preheat the oven to 400°F (200°C). Poke holes in whole sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes until soft. Let cool slightly, then peel off the skin.
  • Transfer the cooked sweet potatoes to a blender or food processor. Blend until smooth, adding water or vegetable broth as needed for consistency.
  • Use immediately, or store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 6 months.

Notes

This purée works well as a base for soups, baking, baby food, or a side dish. Add cinnamon or maple syrup for a sweet version, or garlic and olive oil for a savory twist.
