  • 1 pound ground beef or ground turkey
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning
  • 1 14.5-ounce can diced tomatoes with green chilies
  • 1 15-ounce can black beans drained and rinsed
  • 1 15-ounce can corn kernels drained
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • to taste salt and black pepper
  • 1 cup sour cream for garnish
  • 1 cup shredded cheese for garnish
  • 1 cup tortilla chips crushed, for garnish

Instructions
 

  • In a large soup pot over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
  • Add the diced onion and minced garlic to the pot. Sauté until softened, about 5 minutes.
  • Stir in the taco seasoning and ground cumin, ensuring the beef is evenly coated.
  • Add the diced tomatoes, black beans, corn, and chicken broth. Stir well and bring to a boil.
  • Reduce the heat to low and let the soup simmer uncovered for 20-25 minutes, stirring occasionally.
  • Season the soup with salt and black pepper to taste. Serve hot, garnished with sour cream, shredded cheese, and crushed tortilla chips.
