  • 2 cups cherry tomatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons honey
  • to taste salt and black pepper
  • 1 tablespoon fresh basil chopped, for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the halved cherry tomatoes and cook for 5-7 minutes, stirring occasionally, until they begin to soften.
  • Stir in the grated ginger and honey, and season with salt and black pepper. Cook for an additional 3-5 minutes, allowing the flavors to meld.
  • Remove from heat and garnish with fresh basil before serving. Enjoy as a side dish or topping for grilled meats, fish, or salads.

Notes

This recipe works beautifully with heirloom tomatoes for added color and flavor. Adjust the honey and ginger to suit your taste preference.
