  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground ginger
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 6 cups chicken broth
  • 2 cups cooked chicken shredded or diced
  • 2 cups egg noodles
  • to taste salt and black pepper
  • 1/4 cup chopped parsley for garnish

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 5 minutes until softened.
  • Stir in the minced garlic, ground turmeric, and ground ginger. Cook for 1-2 minutes until fragrant.
  • Add the diced carrots and celery. Cook for an additional 5 minutes, stirring occasionally.
  • Pour in the chicken broth and bring the mixture to a gentle boil. Reduce the heat to a simmer and cook for 10 minutes.
  • Add the shredded chicken and egg noodles to the pot. Simmer for 8-10 minutes, or until the noodles are tender.
  • Season the soup with salt and black pepper to taste. Stir in the chopped parsley just before serving.
  • Ladle the soup into bowls and serve warm. Enjoy!
