Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, chopped nuts, and coconut flakes (if using).
In a separate small bowl, whisk together the honey, melted coconut oil, vanilla extract, ground cinnamon, and salt until well combined.
Pour the wet mixture over the dry ingredients and stir thoroughly to coat the oats and nuts evenly.
Spread the granola mixture evenly onto the prepared baking sheet.
