  • 3 cups rolled oats
  • 1 cup mixed nuts chopped (almonds, walnuts, pecans)
  • 1/2 cup coconut flakes optional
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, chopped nuts, and coconut flakes (if using).
  • In a separate small bowl, whisk together the honey, melted coconut oil, vanilla extract, ground cinnamon, and salt until well combined.
  • Pour the wet mixture over the dry ingredients and stir thoroughly to coat the oats and nuts evenly.
  • Spread the granola mixture evenly onto the prepared baking sheet.
  • Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  • Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up as it cools.
  • Store in an airtight container at room temperature for up to 2 weeks. Enjoy as a snack, breakfast, or topping!

Notes

Feel free to customize this granola with dried fruits, seeds, or chocolate chips once it has cooled. It pairs wonderfully with yogurt, milk, or fresh fruit.
