Ingredients
  

Casserole

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • salt and pepper
  • 1 yellow onion finely diced
  • 1 10-ounce can ROTEL tomatoes diced tomatoes with chiles
  • 2 tablespoons taco seasoning
  • 15 ounces pinto beans drained
  • 3 cups Frito corn chips
  • 2 cups shredded cheddar cheese

Toppings

  • shredded lettuce
  • diced tomatoes
  • sour cream
  • sliced jalapeños
  • sliced black olives
  • chopped cilantro

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  • In a skillet over medium heat, heat the olive oil. Add the ground beef, season with salt and pepper, and cook until browned and cooked through. Drain any excess fat if needed.
  • Add the finely diced onion to the skillet and sauté until softened, about 2-3 minutes.
  • Stir in the ROTEL tomatoes (with juices), taco seasoning, and pinto beans. Allow the mixture to simmer for a few minutes to combine the flavors.
  • Spread a layer of Frito corn chips evenly on the bottom of the prepared casserole dish.
  • Pour the beef mixture over the layer of corn chips, spreading it out evenly.
  • Sprinkle the shredded cheddar cheese over the top of the beef mixture.
  • Bake the casserole in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Top with shredded lettuce, diced tomatoes, and any other desired toppings before serving.

Notes

For a spicier version, consider adding diced jalapeños to the beef mixture or using a spicier taco seasoning. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
