  • 2 cups Brussels sprouts trimmed and halved
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 14.5-ounce can diced tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili flakes optional, for heat
  • to taste salt and black pepper
  • 2 tablespoons fresh basil chopped, for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the halved Brussels sprouts and sauté for 5-7 minutes, until lightly browned.
  • Add the diced onion and minced garlic to the skillet. Cook for another 3-5 minutes until the onion is translucent.
  • Stir in the diced tomatoes, oregano, chili flakes (if using), salt, and black pepper. Mix well and bring to a gentle simmer.
  • Cover the skillet and reduce the heat to low. Let the Brussels sprouts cook in the tomato sauce for 10-15 minutes, or until tender.
  • Remove from heat and garnish with freshly chopped basil. Serve warm as a side dish or over cooked grains for a complete meal.

Notes

This recipe pairs well with pasta, rice, or crusty bread. Adjust the seasoning to taste, and feel free to add a sprinkle of Parmesan cheese if desired.
