Ingredients
  

For the Filling

  • 6 cups sliced peaches fresh or thawed frozen
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

For the Topping

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter cold, cut into small pieces

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish and set aside.
  • In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, and cornstarch. Toss gently to coat the peaches evenly. Transfer the mixture to the prepared baking dish, spreading it out in an even layer.
  • In another bowl, whisk together the flour, rolled oats, brown sugar, ground cinnamon, and salt. Add the cold, cubed butter to the mixture. Using a pastry cutter or fork, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Evenly sprinkle the crumble topping over the peach filling, ensuring all the peaches are covered.
  • Bake in the preheated oven for 35–40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  • Remove from the oven and allow the crumble to cool for about 10 minutes before serving. Enjoy warm, optionally topped with vanilla ice cream or whipped cream.

Notes

For a twist, add a handful of chopped nuts like almonds or pecans to the topping mixture for extra crunch. If using canned peaches, ensure they are well-drained to prevent a soggy filling. This crumble can also be made with other fruits such as apples, berries, or a combination for a mixed fruit crumble.
